We get this tutty fruitty very easily nearby. One of my friend got raw papaya from the garden area of our society. Thought this would be the best use of it.
2 cups raw chopped papaya
1/2 cup sugar or per your taste
1/2 tsp vanilla essence
2-3 drops each of green, red, yellow and orange colour
Take 3 cups of water in a saucepan. Let it boil at high. Add chopped papaya. Let it boil at high for 3-4 minutes. Switch off the flame and let the papaya be in that same hit water for 2 minutes more.
Now strain the papaya in a colander. By this time papaya becomes translucent.
Again take 2 cups of water in a saucepan. Add sugar and let it boil till sugar melts. Keep on boiling for more 2-3 minutes until a bit thick sugar syrup. Add parboiled papaya. Boil for a minute. Switch off the flame. Cover it and let it sit for 6-8 hours.
After 6-8 hours, strain the papaya in a colander. Take 4 bowls. Divide the chopped papayas in 4 bowls. Add 2 tsp vanilla essence and colour accordingly.
Spread the colourful papaya on an inverted side of sieve. Dry till no moisture left. It takes approximately 48 hours. But if monsoon or winter season, it may take few more hours. Now make colourful cookies and cakes nd njoy.😍😍
