RED VELVET

Simple eggless red velvet cake.. Really no cracks, no humps, silky smooth, feathery, moist and glossy surface.

No more words.. Only recipe time😊.

This recipe yield approximate 800 gms of cake without icing.

INGREDIENTS:

3/4 cup granulated sugar

1 cup thick curd

1 1/4 tsp baking powder

1/2 tsp baking soda

1 tsp vanilla essence

1/4 cup olive or any unflavoured oil

1/4 cup milk

3-4 drops Americolour super red gel paste

1 cup APF or maida

1/2 cup cornflour

METHOD:

Preheat oven at 180°c and grease two 9″ cake tin as I had to do icing.

Take sugar in a grinder and grind until fine. Add curd and give 3-4 pulses.

Now add baking soda and powder both. Again give 3-4 pulses and leave it aside untouched for 4-5 minutes. By this time volume will increase and you can see the bubbles on the top.

Time to add essence, oil, milk and gel paste. Mix well. Transfer the batter into a bigger bowl.

Now add sieved maida and cornflour in 3 batches. Mix well with hand mixer.

Transfer the batter into the greased tin and bake for 12-15 minutes only until done.

If you are to bake only in one tin, then cover the top of the caketin after 25 minutes of baking with a foil. Baking time will be from 35-40 minutes.
